"Soil: Porphyry weathered soils with limestone deposits from prehistoric dolomite glaciers. dolomite glaciers. Vinification: The grapes are harvested exclusively by hand. After a short cold maceration, gentle pressing and traditional maceration at controlled temperature take place partly in stainless steel tanks, partly in open tonneaux. The wine is aged for 18 months on the fine lees in the tonneaux and aged for a further 6 months in the bottle."
Food pairings: Meat starters, white meat main courses, rabbit, poultry.
Colour: intense ruby red. Taste: dry, with a pleasant acid structure and velvety, elegant tannins. On the nose: intense and complex, with sour cherries, red currants and raspberries, balanced with liquorice with a slight smokiness.
