| Aging | The grapes are harvested exclusively by hand. After a short maceration period, the grapes are gently pressed. This is followed by temperature-controlled alcoholic fermentation and maturation for 10 months on the fine lees, partly in stainless steel tanks and partly in large wooden barrels. |
