Scapece Zucchine Vasi 200 g

The scapece of courgettes, like the finissima of aubergines, is a preserve linked to the Calabrian tradition. To make this specialty, we use fresh courgettes that are made to swell on the plant, they are cut with a knife tip, we use the outer skin, the fillets that are obtained are salted and mixed in steel containers. After 24 hours they are drained and blanched in white wine vinegar, after which everything is put under weight for another 24 hours, it is seasoned.
