Autumn vegetables are a preserve tied to peasant traditions, and reflect the etymology of the word "conserve". They are prepared in autumn and are "Preserved" for the winter. When the summer gardens are exhausted, and the fields are about to be plowed, grandmothers go to glean these last vegetables from the plants. They are vegetables not suitable for the fresh market, but excellent for making our recipe, rich in flavors and aromas, cherry tomatoes, aubergines, onions and peppers. In my opinion, this recipe fully represents the peasant philosophy.
