Wild artichokes “cynara – cardonculus” are increasingly rare vegetables to find, they grow wild in the Sila biodiversity park, they are rare because of the difficulty in processing them, as the fruit of the wild artichoke is covered in thorns, which must be removed manually by expert hands. The processing involves, at the end of April, the harvesting of these very thorny fruits, in particular the smaller fruits are selected from shrubs about two meters high. When the “dirty” product arrives at the company, it is distributed to the women who with great patience proceed to clean the artichoke. The smaller fruits are sized, those intended for processing in extra virgin olive oil are selected, they are blanched in wine vinegar, making sure to obtain the right cooking and the seasoning is carried out with traditional ingredients.
