The Acquerello rice comes from the Carnaroli plant, which is typical in Italy. This plant grows relatively quickly and can reach a height of up to 180 cm. After harvesting, the grains are separated from the panicles. The grains are stored in huge silos at 10°C for between one and five years. Storage causes starch and proteins to become less water-soluble. This means that the rice remains richer when cooking and the volume increases. Before packaging for sale, the rice grains are milled using traditional methods. This “old method” is gentler on the rice than new methods would be.
