Zero Pas Dosé represents the uncompromising vision of the historic Enrico Serafino winery, which launched the very first Alta Langa DOCG without any dosage with this pioneering sparkling wine. This visionary Metodo Classico matures for an impressive 60 months on its lees deep within the historic cellars of Piedmont, where the grapes originate from sustainably managed vineyards at altitudes up to 550 meters above sea level. The complex marl soils with their limestone and clay layers in the demanding Alta Langa appellation grant the hand-harvested Pinot Noir and Chardonnay grapes a profound, mineral structure, which is preserved in its purest form by the deliberate omission of any expedition liqueur, making the characterful Zero Pas Dosé an icon of Northern Italian sparkling wine.

Zero Pas Dosé is an outstanding culinary companion due to its extreme dryness, vibrant acidity, and refined perlage, shining equally as an upscale aperitif or as a sophisticated partner for haute cuisine. This characterful sparkling wine pairs excellently with the finest seafood platters, fresh oysters, lobster, and noble fish dishes such as pan-seared turbot, beautifully complementing its delicate texture. Furthermore, this sophisticated spumante provides a brilliant accent to protected culinary delicacies such as savory Prosciutto di Parma, traditional Mortadella di Bologna, or intensely aged Parmigiano Reggiano cheese, as the vibrant freshness of Zero Pas Dosé beautifully cleanses the palate after every bite.

Zero Pas Dosé shines in the glass with a brilliant straw-yellow color featuring intense golden nuances and captivates the eye with an exceptionally fine, persistent, and dense perlage. The multifaceted and deep bouquet exudes a complex interplay of candied citrus fruits, dried yellow flowers, and light berries, elegantly backed by a deep, chalky minerality and the characteristic toasted notes of freshly baked brioche. On the palate, this excellent spumante presents itself as absolutely dry, extremely straight, and with a gripping, vertical freshness that balances perfectly with the creamy texture from the long lees aging before a long, savory-mineral finish masterfully seals the uncompromising precision and class of Zero Pas Dosé.
